Bride Loses Half Her Body Weight In A Year Prior To Wedding

This bride-to-be managed to lose HALF of her weight in just one signle year.
Jennifer Ginley, 26, at the time over 19 stone, was triggered by a selection of holiday pictures, but considers herself ready for her wedding.
Before, Ginley had warned her boyfriend Luke of proposing to her to avoid having bad wedding photos.
The Liverpool Echo reports that she was lost 9st 9lbs, going from size 24/26 to size 8/10 in just over a year.
"I knew I wouldn't be able to relax and enjoy myself," she said.

"I knew my fiance loved me whatever size I was but I was determined that I wasn't going to feel that way on my wedding day, so on January 3 I went along to my first Slimming World group.

"After losing five stone I felt fantastic on the day in August and even wore a bikini on my honeymoon, but the best thing is that I finally feel normal - not fat or frumpy."
She joined Kirkby Slimming World group back in May 2015 along with her mother and sister Christine and began to follow a healthy eating plan together.

Jennifer admitted, ‘Before I lost weight I had a massive lack of belief in myself and I feel like I wasted so many years with fake smiles that hid how unhappy I was.’

‘I was a serial failed-dieter and could never understand how I could achieve so much in other areas of my life, yet I couldn’t control what I ate. My boyfriend Luke and I have been together for more than 11 years and I always used to discourage him from proposing because I couldn’t imagine myself as a bride being the size I was.’

My Slimming World Chicken, Chorizo and Sweetcorn Pasta Bake Recipe 2.5 Syns Per Person – SERVES 4

For the last few days I have had some spare chorizo staring me in the face every time I opened the fridge and so mentally, I’ve gone from one meal idea to another. And because I had a tub of quark in need of using up, tonight I settled on a Chicken & Chorizo Pasta Bake.
So here is my version. For something low fat, I think it is close enough for version when substituting a calorific single cream version with a fat free soft cheese.
It serves 4 very generous portions.
Recipe

Ingredients:
– 250g penne pasta (I used wholewheat)
– Fry light
– 2 large skinless chicken breast fillets, cut in to bit size pieces (mine were 380g)

– 1 diced onion
– 1 small 2″ long chorizo sausage, diced (I used Morisson’s Cooking Sausage) = 2.5 syns per person
– 500g passata
– 250g quark (fat free cheese)
– 1/2 tsp dried chilli flakes
– 80g grated low fat cheddar (half of your daily dairy allowance per person)
– 1 chicken stock cube (I used a stockpot)
– 2 tbsp mixed herbs
– seasoning
Method:
1. Preheat oven to 190 C / Gas mark 5.
2. Cook the pasta in boiling water, drain and set side
3. Spray a roasting dish with fry light and add the chicken, chorizo, pepper, onion & chilli flakes and cook until the chicken is done (approx 30 mins).
5. Now stir in the passata, sweetcorn, stockpot, herbs and seasoning in to the chicken mixture and roast for a further 10 minutes.
6. Stir in the quark then the drained pasta and sprinkle with cheese and roast for 30 minutes.

Amazing CHOCOLATE CHIP CHICKPEA Brownies

These are a perfect, healthy alternative to the calorific, sugar packed brownies you buy in the supermarket. At only 3 syns per brownie no butter or flour, they are fast becoming a staple in my house for a sweet, guilt-free snack! Read more for Recipe and Instructions.

What you need:

250g chickpeas (1 can, drained)

2 Eggs, whole

60g cocoa powder

1 bar dark chocolate, broken into small pieces /dark chocolate chips (40g) - the darker it is, the better for you!

60g plain porridge oats, unsweetener

1 small banana

100g artificial sweetener

Instructions:

Put all ingredients except for the dark chocolate chips into a blender.
Blend until smooth
Pour into a baking tray lined with baking paper
Spread chocolate chips evenly and bake for 20-25 mins at 180 Degrees/Gas mark 5

Slimming World's chicken, tarragon and lemon soup

Ingredients

  • 1 medium onion, finely chopped
  • 600ml boiling chicken stock
  • 1 tbsp Knorr Touch of Taste Chicken Concentrated Liquid Stock
  • 1 large skinless and boneless chicken breast
  • 1 medium floury potato, such as King Edward, peeled and cut into chunks
  • Zest and juice of 1 small unwaxed lemon
  • 4 tbsp chopped fresh tarragon, plus sprigs to garnish
  • 4 tbsp fat-free natural Greek yogurt, plus 4 tsp to serve
  • Leftovers can be stored in the fridge for 2 days. Reheat thoroughly before serving.

Method
Put the onion and 4 tbsp stock into a lidded saucepan over a medium-high heat. As soon as it is bubbling, season lightly, cover and reduce the heat to low. Cook for 10 minutes or until soft but not browned. Add the rest of the stock, concentrated stock, chicken and potato to the pan, cover again and cook gently for 20 minutes.
Lift the chicken on to a plate and, when it is cool enough to handle, gently shred the meat and keep warm. (The chicken pieces will give your soup a lovely texture.) Blitz the soup with a stick blender (or use a food processor or blender). Stir in the lemon zest, lemon juice, most of the tarragon, half of the cooked chicken and seasoning to taste. Bring back to a gentle simmer.
Remove the pan from the heat and stir in the yogurt. Ladle the soup into warmed bowls, swirl in the extra yogurt and scatter over the remaining tarragon. Pile the rest of the chicken in the middle of each bowl and garnish with tarragon sprigs to serve.

Italian chicken pasta bake

This is a fab easy one pot dinner, I love Italian flavours of tomato, garlic and basil but you can vary the herbs if you don’t like basil try oregano or even mixed herbs if you like them or if that’s what you have in the cupboard.
I used chicken thighs as I prefer the flavour but if you like you could use chicken breasts if you prefer them. I measured the pasta in mugs as I have always done this as I usually average one mug of pasta makes enough for two people.

Ingredients :

  • 8 boneless chicken thighs ( skin and fat removed) cut into bite sized pieces
  • 1 large onion (chopped)
  • 2 mugs dry pasta (I used penne but any shape will do)
  • 2 cloves garlic (crushed)
  • 1 tbsp tomato puree
  • 1 x 500g pack passata
  • 2 tsp dried basil
  • 160g low fat grated cheese
  • low cal spray oil
  • 1 tsp salt
  • 1 tsp black pepper
Cook the pasta in plenty of salted boiling water until just cooked then drain and set aside.
Spray a large frying pan or wok with the spray oil and place over a medium/high heat and add the chicken and onion cook for about ten minutes until the chicken is browned and cooked through and the onion is soft.
Add the garlic, basil, tomato puree, passata and salt and pepper.  Mix well and cook for another five minutes then add in the cooked pasta and mix again.
Place in a large ovenproof dish and sprinkle the cheese on top.
Bake at gas 6 /200/ 400 for about 20-30 minutes until the cheese is melted and browned.
Serves 4

Amazing Slimming world Hunters chicken

credit : http://vicki-kitchen.blogspot.com/

I used this sauce that I made previously to make this Hunters Chicken, I'd like to thank Nicola in my Cwmbach slimming world class for giving me the idea (she made it first!) after she made my BBQ sauce. Such an easy and simple idea and if you use the cheese as your healthy extra its syn free too.

If not using the cheese as a healthy extra 25g reduced fat cheddar is 4 syns but if you  use it as a healthy extra you can have 40g reduced fat cheddar as a 'B' choice.

Ingredients:

1 chicken breast per person
2 tbsp slimming world friendly BBQ sauce per portion
25g or 40g reduced fat grated cheese (see above)

This is a fab really quick and easy curry, It's economical too using extra lean minced beef, It's a great one to make after work as it's all made within 30 minutes. (A real 30 minutes not a Jamie Oliver 30 minutes!!)

If you want to you can leave out the cumin and coriander and just use curry powder but I love these  extra spices they don't make it hotter but more fragrant.

Kheema Curry

1lb extra lean minced beef
1 large onion (sliced)
1 can chopped tomatoes
2 tbsp tomato puree
2 tbsp curry powder (less if you don't like it too spicy)
2 tsp ground cumin
2 tsp ground coriander
1/2 tsp chili flakes
1/2 pint beef stock
2 cloves garlic (crushed)
2 tsp grated fresh ginger (I use frozen)
6oz frozen peas
1/2 tsp salt
spray oil

In a large pan or wok spray with the oil and add the minced beef, onion, garlic, ginger and chili. Fry over a medium/high heat until beef cooked through and the onion is soft.

Add the curry powder, cumin, salt  and coriander  and fry for another few minutes then add the tomato puree, tomatoes and beef stock. Stir well and then add the frozen peas and bring to a simmer and cook for about 20 minutes until the sauce is thicker and reduced.
