Diet Coke Chicken



Ingredients

2 chicken breasts, cut into chunks
1 onion, diced
1 can diet coke
6 tbsp passata
Splash of Worcestershire sauce
Splash of soy sauce
1 tsp garlic granules
1 tsp chinese five spice
1 oxo cube
Quarter tsp chilli flakes (optional)
Any veg you like - I've used mushrooms, peppers and mangetout


Method
In a large pan, fry the onion & chicken in frylite until the meat is sealed.
Mix the diet coke, passata, Worcestershire sauce, soy sauce, garlic, 5 spice and chilli flakes in a bowl, then pour over the chicken.
Sprinkle the oxo cube over the top and mix well.
Simmer for 30 minutes, then add your veg.
Continue to simmer until your veg is cooked, and the sauce thickens slightly.
Serve with cooked rice.

Chili beef bake

This is a really tasty and warming dinner and although I used mushrooms was thinking peppers would be really good in this too.

If you don't like spice just leave the chili out of it and I'm sure it would still be tasty, I think this would be a great dish to make for a family and once its prepared it can just go in the oven while you get on with other stuff you don't have to stand over it stirring or anything like that. It's a pretty good one to make from store cupboard ingredients and is quite economical and makes quite a lot! I took some to work for lunch the next day : )

Ingredients 
1lb extra lean minced beef
1 chopped onion
4oz sliced mushrooms
1 can chopped tomatoes
1 pint beef stock (from a cube is fine)
1 mug of long grain rice
1 tsp salt
1/2 tsp pepper
1 tbsp worcestershire sauce
1 tsp cumin
1/2 tsp chili flakes
2 cloves garlic (crushed) 
4oz low fat cheddar cheese (grated)

  
Method
Place the minced beef and chopped onion in a large non stick pan and fry over  a medium heat until the minced beef is browned and the onion is soft.

Add all the other ingredients apart from the cheese , mix well, bring to the boil then reduce the heat and simmer for about 20-30 minutes until the rice is cooked and the liquid has absorbed (only stir very occasionally so the rice doesn't break up.) Once this stage is reached taste to see if needs more salt or pepper. 

Put the mixture into a large ovenproof casserole dish and sprinkle over the grated cheese  and bake at gas 6 / 200/400 until cheese has melted and the top is browned

How to stay motivated whilst losing weight on Slimming World


This video is from the amazing Kaleigh Raine, about how to stay motivated whilst losing weight on Simming world , I would say one of the key things is not to let yourself get hungry. Snack on your superfree foods to help keep you feeling full. I find it useful at work to keep a pack of alpen light bars in my drawer. They're 3 syns each (or you can have 2 as your HEB) but can help you feel like your having a treat with your cuppa. Curly wurlys are also good to have in for if you desperately need a chocolate fix! But the main thing is to stick with it as it really does work! Look online for new recipes to try to keep things interesting, we occasionally treat ourselves to a SW steak and chips with peppercorn sauce or a SW cooked breakfast so you feel like you're having a naughty dinner but still sticking to the plan! The added bonus has been my H2B has also lost almost 2st without even trying just from us changing our evening meals.

I keep a meal planner and always plan out at least 2-3 days worth of meals and a week if I am really motivated. This really helps with budgeting on a food shop too by only buying the foods you need.

Mix around your healthy extra's. We often get stuck in a rut and will only stick to the HEB's that we know and love. Go through your book & sw site & try new ones. I find it always helps with my weight loss.

Drink your water, 2ltrs a day really does seem to help me from bloating up.

Plan ahead, have lots of fruit to snack on when you just need something to nibble on.

Stay for image therapy, other peoples ideas and opinions really do help.

A big one for me is always check syn values before consuming, I have made big mistakes in the past by thinking "this won't be too high in syns" to then be mortified at them lol!

Keep a food diary, I fill out the sw sheets aswell as fill in a page to a day diary of all the food ive consumed. How often do we forget things and forget you have already had your syns/healthy extras for the day.

Scan bran & lots of water helps speed up weight loss aswell as consuming plenty of super speed foods.

Exercise is always a good help to anyone wanting to lose weight (I am an example, the last few weeks I have not exercised & gained 5 inches around my waist). So here I am back on plan & exercising again.

And never let one bad day ruin your week, okay so you have over indulged on syns for today but don't let it ruin your whole week, tomorrow is a new day. If you had a bunch of roses & one rose died you wouldn't throw the whole bunch away would you?

Keep in plenty of syn free and low syn snacks for when you feel the need for a choccie or crisp fix. I keep a treat tin & have lots of treats in it all under 6 syns!

And don't let healthy eating ruin your social life, you can still go out and have a few bevvies or a nice meal just make it a flexi syn day

HOW I LOST 3 STONE IN 3 MONTHS WITH SLIMMING WORLD

I think it’s amazing how quick that she lost her weight.  This has inspired me so much I have watched this for like 4 times and I'm amazed by how gorgeous she looks and how great her weight loss was.

Slimming World's low-fat tomato soup


Ingredients
Low-calorie spray oil
1 onion, peeled and finely chopped
2 sticks celery, finely chopped
2 garlic cloves, peeled and finely chopped
1 carrot, peeled and finely diced
1ltr (1¾ pints) water or stock
1 x 400g can chopped tomatoes
1tsp artificial sweetener
Salt and freshly ground black pepper
200g (7oz) low-fat natural fromage frais
To serve:
Low-fat natural fromage frais
Finely chopped tomatoes

Method
Spray a saucepan with oil spray and place over a medium heat. Add the onion, celery, garlic and carrot and stir-fry for 2-3 mins.
Add the water or stock, tomatoes and sweetener and bring to the boil. Reduce the heat to medium and cook for 15-20 mins. Remove from the heat, season well and, using a hand-held blender or food processor, blend until smooth. Return the soup to the pan and stir in the fromage frais.
Ladle the soup into warmed bowls and serve immediately, garnished with a little fromage frais and chopped tomatoes.

Slimming World's honey and yogurt cheesecake


Ingredients
4 level tbsp extra-light spread
10 light digestive biscuits, finely crushed
500g Quark
250g fat free natural Greek yogurt
4 large eggs
2 level tbsp honey (Greek if possible)
1 tsp ground cinnamon, plus extra to dust
2 tsp vanilla essence
2 tbsp sweetener
finely grated zest and segments from 2 oranges
200g fat free natural fromage frais, sweetened to taste
This cheesecake is best made the day before you want to serve it so it has plenty of time to set in the fridge.

Method
Melt the extra-light spread in a pan over a low heat. Add the crushed biscuits and stir to mix well. Spoon into a 22cm non-stick spring-form cake tin, pressing down firmly to make a smooth and even base. Chill until needed.
Preheat the oven to 160C, gas 3.
Put the Quark, yogurt, eggs, honey, cinnamon, vanilla essence, sweetener and orange zest in a large bowl. Beat until well combined and pour over the biscuit base. Bake for 45-50 minutes or until just set and golden. Remove from the oven and leave to cool completely.
Remove the cheesecake from the tin, cover with cling film and chill for 6-8 hours or overnight if possible.
When you’re ready to eat, spread the fromage frais over the top of the cheesecake and dust with the extra cinnamon.
Cut into slices and serve with orange segments.
